Mini Quiche

Wonton wrappers
1 small onion, chopped
1 cup eggbeaters
1 1/2 cups fat free evaporated milk
1/2 cup cheese
bacon

Preheat oven to 350. Coat mini muffin cups with spray. Gently press 1 wonton wrapper into muffin cup. Spray edges of wrapers. In small skillet, saute onion over medium-high heat about 3 minutes. Whisk together egg, milk and cheese. Stir in bacon and onion. Fill wonton wrappers. Bake until set and lightly browned, about 20 minutes.
